If your aspirations are to work in a commercial kitchen and hold a supervisory or team leader role then this certificate will give you the edge on how to succeed. This course gives you an opportunity to learn skills in personal and workplace communication, planning and organising as well as problem-solving and technology. Your studies will give you the skills that will help you motivate and lead kitchen teams, identify and assess operational and services issues, plan food production, schedule work flow, gain an understanding of legal compliance issues, as well as plan, prepare and cost your own menu. You will receive classroom training and complete on-the-job components where you can develop cookery skills to prepare a range of foods. Entry Requirements

Resources Required

It is recommended that students have access to a reliable internet connection to access TAFE Queensland’s online learning system Connect and a computer with up-to-date software, including Microsoft Office, Adobe Acrobat Reader and Adobe Flash Player. This equipment and software is available for students to use at all TAFE Queensland locations.

TAFE Queensland Gold Coast:

As part of the course requirements you will need to purchase and wear a set uniform. A representative from our supplier Totally Workwear will be available at Orientation for you to be fitted, to order and make payment directly to Totally Workwear. If you do not attend the Orientation day, you will be responsible for making your own arrangements directly with the supplier, Totally Workwear within seven days of the scheduled Orientation day.

Students are required to have the following equipment for practical and live lessons:

  • A compulsory uniform consisting of a chef’s jacket, chef’s pants, chef’s cap, white necktie, a white bib style apron purchased from Totally Workwear (approximate cost $150.00)
  • A knife kit will need to be purchased (approximate cost $275.00 – if purchased through our supplier Totally Workwear)
  • Black enclosed leather non-slip shoes (approximate cost $77.00 – if purchased through our supplier Totally Workwear)

Whilst in attendance of practical classes you must wear your chef’s uniform. This should be brought with you to classes and changed into upon arrival at TAFE Queensland Gold Coast and not worn on your way to or from the campus due to hygiene regulations.

TAFE Queensland Brisbane:

This qualification includes the completion of 360 Vocational Placement hours over the 3 semesters as part of the program. Vocational Placement is structured workplace learning that prepares you for the workforce.

The experience with the placement provider will:

  • enable you to gain hands-on experience in the workplace;
  • help you link knowledge and skills with jobs; and
  • help you to better understand theory learnt by putting it into practice.

TAFE Queensland North:

Vocational Placement: All students must complete a minimum of 360 hours of vocational placement (6 weeks at 40 hours per week). This is spread across the duration of the program. TAFE will procure placements on behalf of the students, but it is the student’s responsibility to provide their own transport and accommodation if required.

TAFE Queensland East Coast:

Students are encouraged to complete Work Experience throughout the duration of this course.

TAFE Queensland Gold Coast:

As an enrolled student of TAFE Queensland Gold Coast you may be required to attend practical work placements as part of your studies. This is at the discretion of the teacher.

Additional costs

TAFE Queensland Brisbane:

Prior to orientation students will be required to purchase a complete uniform kit comprising of a chef hat, two long-sleeved jackets, neckerchief, chef trousers, two aprons and appropriate safety footwear costing approximately $250. Additionally, a full set of tools and equipment costing approximately $250 are required to be purchased by each student. The faculty administration can provide a full list and information on where to purchase these items.

Please note that all students must be appropriately dressed and have the necessary equipment before entering any practical class.
